Ghee - The Secret Ingredient Of Quality Indian Dishes At Home!

I discovered a love for Indian foods many years ago. I am not of Indian origin, but I have cooked many wonderful dishes, and am always on the lookout for an interesting sounding spice combination and a new recipe to try. Long ago I found I really disliked commercial curry powder, no matter how fresh, so for a long time I avoided Indian cuisine, thinking it was all about curry powder. I was so wrong. I have been making up for lost time ever since.

The owner was from Goa in Southern India. After many visits he saw my interest in traditional Indian cookery and invited me to work in his kitchen for a day. I picked up so many recipes that day and wrote them all down by hand when I got home.



Besan Ka Ladoo: These are round balls and the main ingredient is gram flour. As popularly known as ladoos these are all time favourite Indian sweet which is made in almost all regions of India with local variations. This is a sweet which is prepared for almost all the Indian festivals. It is very easy to make and a person with very little kitchen expertise can also make it. You do not have to even look for any special ingredients and the preparation time is also very less.

These form the outer covering for the rolls. Knead the dough with milk and little oil or ghee (clarified butter) if it is for the kids, the rolls will come out much softer and stay palatable till their lunch time.

Make sure there is no cream added to the tikka masala. If you are having rice then have some steamed rice instead of the biryani or pileau. Ask for no ghee to be added to the steamed rice. When you order curry this will normally be accompanied by Indian breads known as chapatti or naan.
